Upside Down Banana Cake~Recipe

Hello Lovelies!!
I'm so happy its Thursday, the week is flying by for me and I couldnt be more grateful!
I cant wait to just do absolutely NOTHING this weekend! Oh, and the weather here in South Florida is absolute perfection.

So I made a very delicious Upside Down Banana Cake yesterday. I was so happy with how good it turned out. Now let me warn you... You might devower this cake the same day you make it!
Mines looked a little burnt on the top but thats because I used brown sugar, next time i'll use white sugar and I encourage you to do the same.

 I'm going to make 2 more cakes today. NO they are not for me! {unfortunately} but my grandma just moved to a new house and im going to bring her a cake and I also promised my neighbor who happens to be my aunt a cake too! So lots of baking going on tonight..
And I just love baking in the fall, especially with the nice weather I might just open all the windows and doors and cook all night long! {JK}

So lets get to it!
{I wish I could cook during the day so my pictures would come out better but I had to make use of what I had}

Upside Down Banana Cake



Ingredients:
1- 1cup of granulated sugar
2- 3 ripe bananas
3- 2/3 cup light brown sugar {or you can use white sugar if you dont want it too dark on the bottom}
4- 1 tsp of cinnamon
5- 1 tsp of vanilla
6- 2 cups all purpose flour
7- 1 cup sour cream {very different, but when you mix it with the baking soda the chemical reaction leaved the cake extremely soft and moist. trust me!}
8- 2 eggs
9- 1/2 tsp baking soda
10- 1 tsp baking powder
11- 8 tbs of butter for cake & 2 tbs for caramel

- 9 inch pan


Directions:


-cut 2 bananas into slices


-Put your pan over  medium to low heat.
Add the sugar, cinnamon and 2 tbs of butter. Mix all ingredients together until the sugar i completely dissolved and caramel has formed.


- spread the caramel evenly on the bottom of the pan and cover it with your sliced bananas

- Turn your oven to 350d


-Beat 8tbs of butter on your mixer, until its lighter and its fluffy


-Slowly add the sugar


-Add the eggs one at a time.
Then mix together the sour cream and the vanilla extract


-mash the leftover banana and add it to the wet ingredients.

-In a different bowl sift all dry ingredients together {flour, baking powder and baking soda}


-Fold the dry ingredients in with the wet ingredients.


The batter will be thicker then usual but dont freak out thats how its supposed to be.


-put the batter on top of the bananas

-spread it evenly

Bake the cake at 350d for 35-45 mins.
{when the tooth pick comes off clean, its ready!}


Look at that pretty golden color!


-cover it for 15 mins before you flip it.




This cake came out so moist and delicious that you wont believe it!!

It's going to be on Mondays, because unfortunately rarely have time to cook on the week days with going to school at night and on the weekends is the only time I have to spend in the kitchen + it's nice to prepare a nice meal and be able to invite friends and family over to try it out!   5. this looks so good camylla, my husband eats bananas but no quickly enough so this is a great recipe to use up bananas before they go bad
