Pot Luck Dinner

Nope, Sunday's goodbye party was not enough. We had to have a last minute get together before Mikey and Beca left.

We decided to do a pot luck dinner at our friend Delfina's house on Tuesday, and it was DELICIOUS! 
I made Chicken Bruschetta, and seasoned roasted potatoes.

My friend Delfina, made the best Rice pudding. I dont really like rice pudding, but hers was so light and refreshing. I'll be posting the recipe for her pudding soon!

{Chicken Bruschetta}
-4 chicken breast
-1 1/2 cup of bread crumbs (could be seasoned but i used regular)
-2 eggs
-3 tbs cup of heavy cream
-1 lemon
-salt
-pepper
-2 cups chopped tomatoes
-1 cloves of garlic finely chopped
-1/4 cup of chopped basil
-1 small packet of shredded cheese

Directions:
Slice the chicken breast in the middle so it could be thinner, then in half so it could be smaller.
Wash it with the lemon juice (the lemon juice not only helps remove any bacteria that the chicken might be carrying, but it also gives it some flavor). Now sprinkle the chicken with salt and pepper.

On a seperate plate beat the 2 eggs, and the heavy cream with a fork and sprinkle a little salt.
And on another plate put the bread crumbs.
                                                                               
After the chicken breasts are coated. Add 1 inch of canola oil to a large skillet, and when its hot add the chicken breasts. Let it get golden brown in each side, it should take about 5-7 mins on each side. Make sure the oil isnt too hot or else the chicken will burn before it gets fully cooked. 





Its time for the 'Bruschetta' part of the chicken. In a bowl add the tomatoes, 1 garlic clove finely chopped, and the basil. Mix it well and add a pinch of salt.


Get the chicken and add 1 tbs of the salsa on top, then sprinkle with cheese. Now put it in the oven at 375d until the cheese melts.

{Roasted Seasoned potatoes}

Ingredients:
-1 bag of small potatoes
-1 clove of finely chopped garlic
-1tbs of salt
-1tsp of pepper
-1tsp of dried oregano
-1tsp of dried thyme
-1tsp of dried basil
-1tbs of olive oil

Directions:

Cut the potatoes in 4. Cook the potatoes in water and a pinch of salt for 6 mins on high heat. Drain the potatoes and put it on a bowl. Now mix all the ingredients together (salt, garlic, pepper, oregano, thyme, basil, and olive oil).
                             

Spread it evenly on a cooking sheet, and put it in the oven at 375d for about 45 mins. Dont forget to flip the potatoes half way through so that it stays crispy on both sides.
