Vegan Strawberry Cupcakes anyone?

I think i might go insane if i dont leave florida soon!. Im serious i havent gone on a trip in FOREVER! okay i lied i went to Orlando last month, but i dont count that as trip because i didnt leave florida. The hubby and i were planning to take a roadtrip with our friends Beca and Mikey to california, but we recently realized that we cant afford to go :(

Im going to spend Christmas and New Years in Brazil this year which means i need to pay for my plane tickets. $1,300 EACH! can you belive it? Thats a lot of money and since were going in the hollidays we have a list of people we need to buy gifts for. I think every month i need to buy some so its not too hard on our pockets.

In August we need to buy a new car for the hubby. Now we live right in front of his job, so he can usually walk there but when we move he will need a car to get around.. On top of all that i want new furniture and we have to pay for his school!... So you see where we cant afford to spend $2,000 on a roadtrip right now.
But what i am trying to do is find some cheap packages for Vegas to celebrate my 21st birthday. My birthday is September 12, so we have some time so save up

Once upon a time my friend Delfina introduced me to a delicious strawberry vegan cupcake, I loved it! and ever since then i have made it many times... So i decided to share this awesome easy delicious recipe with you guys. I know sometimes the word VEGAN scares us but i promise you there is no eggs but it tastes amazing!.

Ingredient:
-1 3/4 cups of all purpose flour
-1 cup of sugar


-14 strawberries
-1tbs of vinegar

-1/2 cup of oil
-1 tsp of vanilla
-1 tbs of baking soda


Directions:
-Turn the oven on to 350 f.
-cut the stem off the strawberries.


-Blend the strawberries in a blender.

-In a bowl add the sugar, flour, and baking powder.

-In a different bowl add the wet ingredients (Oil, vinegar and vanilla)

-add the liquids to the dry ingredients.


- Mix it well... And now grease the cupcake pan and put on the oven for 20-30 mins.

-I made a very simple cream cheese toping for this cupcake. I added to a bowl 1/2 cup of cream cheese and 3tbs of powdered sugar.. 

             ENJOY!!!
